Its Sunday afternoon and I am sitting in my living room watching the end of the Nascar raceI I am waiting to find out who makes it to the final race of the season and who has the chance at the Championship. Outside the snow is falling softly and I am dreaming of moving somewhere warmer. Phoenix perhaps ….
Sunday is always meal and workout planning for me. I like to know that I have everything wrapped up and nothing to throw me later this week.
I also like to bake, especially in the winter months. I warms our home and we love eating homemade goodies. Of course being the health nut that I am I usually take a fantastic recipe and tweak to make it a little healthier. I can’t change it up too too much otherwise my kids complain and the food goes to waste.
Today I chose two recipes from Two Peas and Their Pod and tweaked them just enough. My first recipe was Browned Butter Apple Bread, I omitted the glaze, switched out some of the all purpose flour for whole wheat flour. I also added a bunch of flax and a good dose of Hemp Hearts. For my second recipe I made peanut butter oatmeal apple cookies. This time all the did was switch out the flour to whole wheat. Cookies are a little harder to tweak.
I also added some pecans to the bread.

Unfortunately none of these items can go to school with the girls as they have nut safe schools. So I most likely will whip up some blueberry or banana muffins in the morning. It makes me feel good when they have homemade food in their lunches. I NEVER buy store made baked goods, I just can’t be sure of the ingredients. I do sometimes send crackers but really prefer homemade.
Meal Plan November 9 – 15 2014
Sunday – Family supper – Locally raised prime rib roast, sweet potatoes, carrots, squash and corn meal biscuits.
Monday – LEFTOVERS 🙂
Tuesday – Mango Fajitas
Wednesday – Beef Barely Soup
Thursday – Left over soup and Brownies for Emily’s 14th birthday.
Friday – Pizza Night with side salad or cut up veggies
Saturday – Locally Raised Roast Chicken, mashed potatoes and veggies with a BIG piece of homemade Chocolate Cake for Emily’s birthday celebration.

One thing I do to help others is … I go beyond my “job description” to assist my “teacher” in the classroom. I believe in doing whatever it takes to help kids get the best education possible, no task is too big or too small.
